Back-to-school season is here, which means busy afternoons, homework piles, and the temptation to swing through the drive-thru. But tonight, we’re skipping the fast food in favor of something cheaper, healthier, and more fun—a dinner the whole family can help make!

Mini Sheet Pan Pizzas 🍕

Why we love it:

Ingredients:

  • Whole wheat pita bread (or mini naan)
  • Pizza sauce
  • Shredded mozzarella cheese
  • Toppings of choice: sliced peppers, mushrooms, olives, diced ham, pepperoni, pineapple, spinach, etc.

Instructions: Oven Method

  1. Preheat oven to 400°F.
  2. Place pita bread on a baking sheet lined with parchment paper.
  3. Spread each with pizza sauce—let the kids help with spoons or silicone brushes.
  4. Sprinkle with cheese.
  5. Add toppings (pro tip: set out bowls of toppings and let kids “shop” for theirs).
  6. Bake 8–10 minutes until cheese is melted and bubbly.
  7. Slice & serve with a tossed salad or fresh fruit for a balanced meal.

Instructions: Air Fryer Method

  1. Assemble pita/naan pizzas with sauce, cheese, and toppings as above.
  2. Preheat air fryer to 375°F (if required).
  3. Place pizzas in a single layer in the basket—you may need to do batches depending on size.
  4. Air fry 5–7 minutes until cheese melts and edges are crispy.
  5. Let cool 1–2 minutes before serving—they come out hot!
  6. Serve with a tossed salad or fresh fruit to add balance and color.

Texas Tip:
For smaller air fryers or quicker cooking, try “street taco size” tortillas instead of pita—they cook fast and keep your kitchen cool.
