Cozy Fall Soup: Creamy Roasted Butternut Squash or Pumpkin Soup for Chilly Evenings

Fall is in full swing here in Montgomery, and there’s nothing cozier than a warm, creamy soup on a crisp October evening. This week, we’re keeping it versatile—you can make it with roasted butternut squash or fresh pumpkin depending on what’s in your kitchen.
Ingredients:
- 1 medium butternut squash (or 1 small pumpkin), peeled, seeded, and cubed
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 cups vegetable or chicken broth
- 1 cup heavy cream (or coconut milk for a lighter option)
- 2 tsp olive oil
- 1 tsp cinnamon, ½ tsp nutmeg, pinch of cayenne (optional)
- Salt & pepper to taste
Instructions:
- Preheat oven to 400°F. Toss squash or pumpkin with olive oil, salt, pepper, and cinnamon. Roast for 25–30 minutes until tender.
- In a large pot, sauté onion and garlic until soft.
- Add roasted squash/pumpkin and broth. Simmer for 10 minutes.
- Blend soup until smooth using a hand blender or in batches in a countertop blender.
- Stir in cream, adjust seasoning, and serve warm.
- Optional: garnish with roasted pumpkin seeds or a swirl of cream.
