Welcome to the coziest Foodie Friday of the year — the glorious morning after Thanksgiving. The dishes are (mostly) washed, the decorations for the next holiday may or may not already be going up, and you might even be sneaking into the fridge at 3:00 a.m.
No judgment. I’ve done it. Happily.

Because let’s tell the truth:
Leftovers are the REAL star of Thanksgiving weekend.

So today we’re celebrating the comfort food we dream about — the easy, messy, delicious combinations that somehow taste even better the next day.


🦃 My Favorite Day-After Tradition: The Open-Faced Texas Turkey Sandwich

This is the one I grew up eating — simple, classic, and absolutely perfect.

Here’s how to build it:

🍞 Step 1: White Bread… the good, old-fashioned kind.
Yes, white bread. Two slices. Trust the process.

🍽️ Step 2: Plate Setup
Place one slice in the center of your plate.
Cut the second slice diagonally, and place those two pieces on each side.
(It looks fancy without any actual effort — my favorite kind of fancy.)

🥔 Step 3: Load It Up
Now pile on your leftovers like a Thanksgiving artist:

  • Turkey
  • Mashed potatoes
  • A little stuffing
  • A drizzle of corn and/or sweet peas
  • And of course… gravy. Lots of gravy.

🔥 Step 4: Heat + Enjoy
Pop the whole masterpiece in the microwave until warm.
If you’re feeding more than just yourself, heat everything separately first and then build everyone’s plate.
This is comfort food at its finest — cozy, familiar, and absolute perfection.


🥪 No Turkey? No Problem. Try My Heavenly Ham & Cheese.

Sometimes the turkey goes fast. Sometimes people show up with extra hungry energy.
When that happens, I go straight to my Ham + Cheese Day-After Sandwich — and it never disappoints.

Here’s the magic:

🍞 Start with:
Cheddar–jalapeño bread (the kind that already smells like happiness)

🧀 Add:
Your favorite cheese — but I highly recommend pepper jack for a little kick

🥓 Layer On:
Slices of leftover ham (thick-cut if you’ve got it)

✨ Pro Tip:
I spread a little mayo on the bread and then melt LOTS of butter in my skillet before frying the sandwich.

It comes out golden, melty, slightly spicy, and honestly… a little bit of heaven.

Serve it with a handful of chips or a tiny side of leftover dressing if you’re feeling bold.
