With Easter weekend here, a lot of people are keeping things a little lighter on Good Friday—and here in Texas, that’s the perfect excuse to bring out the seafood.
My husband LOVES crawfish this time of year, and one of his favorites is the Crawfish Creole from Monty’s Lighthouse in Montgomery.
Now, I’ll be honest… I had never made it myself. But I found a simple way to recreate that flavor at home—and it’s easier than you might think.
🦞 Easy Crawfish Creole (Beginner-Friendly!)
This is not fancy. This is real-life, doable, and delicious.
🛒 Ingredients:
- 1 lb crawfish tails (peeled, Louisiana-style if you can find them)
- 1 can diced tomatoes
- 1 small onion (chopped)
- 1 bell pepper (chopped)
- 2 celery stalks (chopped)
- 2 cloves garlic (minced)
- 1–2 tsp Cajun seasoning
- 1 cup chicken broth
- 1 tbsp butter or oil
- Cooked white rice
👩🍳 Directions:
- In a pan, sauté onion, bell pepper, and celery (the “holy trinity”) in butter or oil until soft.
- Add garlic and cook for about a minute.
- Stir in diced tomatoes, broth, and Cajun seasoning.
- Let it simmer for about 10–15 minutes.
- Add crawfish tails and cook another 5–7 minutes (don’t overcook).
- Serve over rice.
