There are some foods that instantly feel like home, and for me, banana bread is at the top of that list. Warm, comforting, and just sweet enough—it’s the kind of recipe that doesn’t need to be fancy to be memorable.
National Banana Bread Day is February 23rd, and honestly, it’s one of my favorite food holidays. Years ago, I made banana bread using a starter mix and just kept it going for months. Every loaf was a little different, every kitchen smelled amazing, and it became one of those simple traditions that sticks with you.
And while I love a classic banana bread… I have to admit something.
I am very partial to pecans.
Pecans add the perfect crunch without overpowering the banana flavor. They’re rich, buttery, and feel especially right here in Texas. If I have pecans in the pantry, they’re going in the batter—no question.
Pro tip:
Lightly toast the pecans before adding them to the mix. It takes just a few minutes and adds a deeper, nuttier flavor that makes the loaf feel extra special.
My Go-To Classic Banana Bread (Easy & Reliable)
Ingredients:
- 3 ripe bananas (the browner, the better)
- ½ cup melted butter
- ¾ cup sugar (white or brown)
- 1 egg
- 1 tsp vanilla
- 1 tsp baking soda
- Pinch of salt
- 1 ½ cups flour
- Chopped Pecans
Directions:
- Mash bananas
- Stir in butter, sugar, egg, and vanilla
- Add dry ingredients
- Pour into greased loaf pan
- Bake at 350° for 50–60 minutes
Simple. No mixer. No stress.
Mix, pour, bake, and try not to cut into it too soon (this is the hardest part).
