Spring is here, Easter is around the corner, and if you’re anything like me—you don’t need fancy… you just want good food that everyone actually eats.

Some of the best holiday meals aren’t complicated. They’re simple, fresh, and made with a little love (and maybe a shortcut or two 😉).

Here are a few of my favorite easy Easter sides that pair perfectly with ham or roasted chicken.

🥕 My Favorite: Grilled Carrots (So Simple, So Good)

I LOVE carrots, and this is one of my go-to sides.

  • Start with fresh carrots

  • Lightly steam them

  • Cut them in half

  • Then throw them on the grill

They get just a little char on the outside and stay tender on the inside—so good.

And let’s be real… if it’s raining (because Texas weather loves to surprise us), I just use my indoor grill or the air fryer.

Still delicious.

🥓 Fresh Brussels Sprouts with Bacon

This one is always a crowd favorite.

  • Fresh Brussels sprouts

  • Crisp up some bacon

  • Toss it all together

It’s simple, full of flavor, and somehow even people who think they don’t like Brussels sprouts end up going back for seconds.

🧀 🧀 Classic Mac and Cheese (With a Little Shortcut 😉)

Because let’s be honest… someone at the table is always hoping mac and cheese shows up.

It doesn’t have to be fancy—just warm, cheesy, and comforting.

I do cheat a little…

  • Cook your favorite noodles

  • Drain them

  • Mix in salsa con queso (cheese dip with a little zip!)

  • Pour into a baking dish

  • Top with shredded cheddar cheese

  • Bake until the cheddar is nice and gooey and just a little toasty on top

Easy peasy.

And yes… it disappears fast every single time.

🍅 Fresh Salsa on the Side

I love making a quick fresh salsa in my (very loved) yellow food processor.

It adds a fresh, bright flavor to the meal and is perfect to snack on while everything else is cooking.
