April just feels like a fresh start, doesn’t it? The weather is warming up, we’re opening windows, and suddenly those heavy winter meals just don’t sound quite as good.

This week’s Foodie Friday is all about keeping things light, easy, and flexible—because let’s be honest, sometimes you just want to use what you already have in the fridge and call it dinner.

Introducing your new go-to: The Spring Skillet Toss.
It’s quick, customizable, and can go creamy or stir-fry style depending on your mood.


🛒 What You’ll Need (Mix & Match!)

Protein (pick one):

  • Chicken (rotisserie works great!)
  • Pork
  • Beef
  • Shrimp
  • Or keep it veggie!

Vegetables (whatever you have!):

  • Broccoli
  • Bell peppers
  • Snap peas
  • Carrots
  • Zucchini
  • Mushrooms

Base Options:

  • Rice
  • Noodles
  • Or even cauliflower rice if you’re feeling extra healthy

🍳 Option 1: Light Creamy Skillet

If you’re craving something comforting—but not too heavy—this is your move.

Directions:

  1. Cook your protein in a large skillet with olive oil, garlic, salt & pepper.
  2. Toss in your veggies and cook until just tender (you still want that little crunch!).
  3. Add:
    • 1 can cream of chicken (or mushroom) soup
    • ½ cup milk or broth
  4. Stir and let it simmer for a few minutes until everything is coated and warmed through.
  5. Serve over rice or noodles.

💡 Tip: Add a squeeze of lemon at the end to brighten it up for spring!


🥢 Option 2: Quick Spring Stir Fry

Want something lighter and fresher? This version is fast and full of flavor.

Directions:

  1. Cook protein in a hot skillet or wok. Remove and set aside.
  2. Stir fry veggies in a little oil until crisp-tender.
  3. Add protein back in and toss with:
    • Soy sauce
    • Garlic
    • Ginger (optional)
    • A drizzle of honey or teriyaki sauce
  4. Serve over rice or noodles.

💡 Tip: Sprinkle with sesame seeds or green onions for a little extra flair.
