Homemade Spaghetti Sauce

Some days you want comfort food… but you also don’t want to blow your January reset or make a trip to the grocery store.

That was me today.

I wanted something semi-healthy, semi-homemade, and very comforting, so I did what I usually do — pulled out a frying pan and started checking the fridge and pantry to see what I could work with.


🧅 Step One: Start With What You Have

I chopped up:

  • One onion

  • A few small bell peppers

  • Carrots

  • The last few fresh tomatoes hanging out in the fridge

I added everything to a frying pan with a little olive oil and let it soften and get happy.

Then I browned up some ground beef (because comfort food still needs comfort).


🫙 Step Two: Let the Crockpot Do the Work

Once everything was cooked, I transferred it all to the crockpot and added:

  • Garlic powder (I was out of fresh — it happens)

  • Red pepper flakes

  • Black pepper

  • 1 jar of Simply Ragu Spaghetti Sauce (the 8-ingredient one)

  • 1 can of fire-roasted tomatoes

Was this everything I’d normally use? Nope.
I didn’t have celery or Italian seasoning — and that was on purpose. This was a use-what-you-have day, not a grocery run day.

I turned the crockpot to medium and let it do its thing.


👩‍🍳 Important Step: Taste Test

A few hours later… wow.

You have to kick the tires and taste it, right? The flavor was rich, comforting, and honestly better than expected for something that started as a pantry clean-out.


🥒 Lighter January Twist

Since I’m working on eating fewer carbs this January, I’m skipping traditional pasta.

Instead, we’re:

  • Spiral-cutting zucchini and squash

  • Giving them a quick sauté

Right before serving, I’ll stir in:

  • Fresh chopped spinach (it wilts right into the sauce)

Finish with:

  • A little freshly grated Parmesan cheese on top

And that’s it.

Comfort food, but lighter. Homemade, but easy. And no extra trip to the store.
