Of course, while exploring Gilmer, I had to stop at a local bakery - Provision Farm Collective.

And yes… I enjoyed it.

Healthy choices took a little vacation that day because the bread was amazing, and the brookie was absolutely worth the stop. (If you haven’t had one, a brookie is the delicious combination of a brownie and a cookie — basically two desserts deciding they belong together.)

But that is part of what makes exploring Texas towns so much fun — discovering those little local gems that become part of the experience.
