First, I chopped up a Granny Smith apple—you know, the tart, crisp, green one we all claim is “for baking” but somehow ends up in the snack drawer—and placed it in the bottom of the crock pot to make a sweet-tart, cozy little bed.

Then we seared a pork tenderloin on all sides—because a little golden crust never hurt anybody—and nestled it right on top of those apple pieces.

Next came the star of the show: a can of leftover jellied cranberry sauce (still shaped like the can, as it should be). I spread it generously over the tenderloin.

Finally, I added a couple sprigs of rosemary because nothing says “I am a fancy holiday chef” like herbs you didn’t grow but will absolutely take credit for.

The result? A slow-cooking masterpiece that turns leftovers into something completely new—kind of like holiday magic, but easier.

This is the one I grew up eating — simple, classic, and absolutely perfect.

Here’s how to build it:
