Foodie Friday: Jacque’s Ultimate Texas Thanksgiving Menu
(Easy. Delicious. Totally Doable — Even If Your Oven Once Quit on You.)
Thanksgiving is almost here, and if your kitchen is about to smell like heaven and chaos had a baby — you are my people.
This year, I’m sharing my full Texas-style Thanksgiving Menu, including a brand-new feature: Jacque’s Best Thanksgiving Turkey.
This is everything you need for a table full of comfort, color, and family favorites — with plenty of shortcuts, because life is busy and we love balance.
Let’s eat!
🦃 Jacque’s Best Thanksgiving Turkey (My New 2025 Feature!)
This is the turkey that will make people whisper, “Did she order this from a fancy place?” Nope — you made it.
Ingredients
- 1 whole turkey (12–16 lbs)
- 1 stick butter, softened (more butter is always good – I cut it in slices and place all over the Turkey)
- 2 tbsp olive oil
- Salt & pepper
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp paprika
- 1 tbsp poultry seasoning
- 1 large onion, quartered
- 1 lemon, halved
- 4–6 garlic cloves
- Fresh herbs (rosemary & thyme)
- I also like to add some chicken or vegetable broth (any drippings will be great for your gravy – even if you only add it to package gravy)
Instructions
- Preheat oven to 325°.
- Pat turkey dry. Massage with butter + olive oil (yes, massage — the turkey deserves spa treatment).
- Season generously inside and out.
- Stuff cavity with butter, onion, lemon, garlic, and herbs.
- Roast uncovered for first 45 minutes, then tent with foil.
- Cook until the internal temp hits 165° — usually 3–4 hours.
- Let it rest (important!). Slice. Admire. Thank yourself.
🥖 Texas Sausage Stuffing
(The star of the table. People will ask for this recipe.)
Texas Sausage Stuffing Recipe
Ingredients
· 1 lb mild or spicy breakfast sausage (I use spicy because… Texas!)
· 1 loaf of day-old bread, cubed
· 1 cup celery, diced
· 1 medium onion, chopped
· 1 bell pepper (green or red), chopped
· 2–3 cloves garlic, minced
· 2 ½–3 cups chicken broth
· 1–2 teaspoons poultry seasoning
· 1 teaspoon dried sage
· Salt & pepper to taste
· 2 eggs, lightly beaten
· Optional: chopped jalapeños for a Texas kick
Instructions
1. Preheat oven to 350°.
2. Brown sausage in a large skillet. Don’t drain all the drippings — that’s flavor!
3. Add celery, onion, pepper, and garlic. Cook until softened.
4. In a big bowl, combine bread cubes with the cooked sausage mixture.
5. Add broth, seasonings, and eggs.
6. Mix gently until everything is moistened but not soggy.
7. Spread into a greased baking dish and bake 35–45 minutes until golden.
Serve warm. Watch people fall in love with you.
🥔 Homemade Mashed Potatoes With LOTS and LOTS of Butter
Yes… lots. I don’t measure butter on Thanksgiving — I vibe it.
Ingredients
- 5 lbs Yukon gold potatoes, peeled & cubed
- 1 ½ sticks butter (minimum — more if your heart says so)
- 1 cup whole milk or half-and-half (heating your milk will make your potatoes sing & I love whipping cream for special occasions
- Salt & pepper
- Optional: roasted garlic or cream cheese (not my favorite when I have gravy)
Instructions
- Boil potatoes until tender.
- Drain well.
- Add butter first (watch it melt like joy).
- Pour in warm milk.
- Mash until fluffy.
- Taste, adjust salt, add more butter if your ancestors demand it.
🥣 Homemade Gravy That Makes Everything Better
While I love homemade gravy sometimes I grab a couple packages of Turkey gravy and add drippings from the turkey and/or chicken/vegetable broth instead of water with some of the Turkey seasonings to make it taste more homemade.
Ingredients
- 4 tbsp butter
- 4 tbsp flour
- 2 cups turkey drippings or broth
- Salt & pepper
- Optional: splash of cream for richness
Instructions
- Melt butter.
- Whisk in flour to make a golden roux.
- Slowly add drippings/broth.
- Simmer until thickened.
- Salt & pepper generously.
- If it’s too thick, add more broth. Too thin? Keep simmering.
Serve over potatoes, stuffing, turkey, your emotions — it works everywhere.
